Yield: About 15 biscuits

I have seen these biscuits all over the food blog world. Who doesn't love those biscuits from that national seafood chain? You know that is the only reason you go! However, I didn't think these were as good. And, I thought they were very salty. Chris thought they rocked and ate just about all of them. I think that the melted butter and garlic salt mixture that I painted on top of the biscuits right out of the oven is the culprit behind the saltiness. Next time I will just use garlic powder.
Also I thought the bake time was a bit insane. I put them in at the recommended temperature and time and when I checked them about four minutes prior to the timer going off they were overly brown. The next batch I lowered the temperature and put them in for less time, and they turned out much better.
I'm not a big salt fan; my husband is. I think that without painting salt on the top they would taste much closer to the seafood chain's biscuits. But, they are not as soft, which really is a key factor for me in the deliciousness of the biscuits. All that being said, they are rather yummy when they didn't get too brown and probably even better with less salt. I would still recommend these when you are in the mood for biscuits.

- 2 1/4 cup all purpose flour
- 2 1/2 teaspoons baking powder
- 2 teaspoons sugar
- 3/4 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons cold butter, cut into 1-tablespoon pieces
- 1 1/2 cups white cheddar cheese, shredded - if you don't have white cheddar simply use yellow cheddar, I happened to have some on hand so that is what I used
- 1 cup buttermilk
- 1 teaspoon garlic salt
- 1/4 cup butter, melted
- 1/2 teaspoon garlic powder
Directions:
Preheat the oven to 400 F. Prepare a baking sheet with nonstick spray or parchment paper.
In a large bowl, combine the flour, baking powder, sugar, baking soda and salt. Using your fingers or a pastry cutter or simply a fork, add the butter and cut it into the flour mixture. Mixing and pinching it until the dough resembles coarse sand. Add the white cheddar and stir to combine.
Add the buttermilk and garlic salt, stirring well to combine. If the dough is too dry and a little more buttermilk, 1 teaspoon at a time, until the dough holds together.
Drop the dough onto the baking sheet, spacing about 2 inches apart.
Bake for about 15-20 minutes, until the tops are golden brown.
In a small bowl, combine the melted butter and garlic powder.
Remove the biscuits from the oven and lightly brush each one with the melted butter mixture. Serve immediately.
