This is my go to, make them all the time, super easy and tasty weeknight recipe. There isn't much prep, the ingredients are simple, and you can pop it in the oven and forget about it for a while
You can certainly tweak the recipe to whatever your tastes are and whatever you have on hand. Season your chicken and then add in some vegetables - onion, carrots and potatoes are pretty standard.

- 1 chicken breast
- 1 potato, peeled and sliced into round disks - I use russet
- 1 or 2 carrots, peeled and sliced into round disks
- about half of a medium onion or 1 small onion, sliced into thin rings
- salt and pepper
- seasoning of choice - I use an organic no salt seasoning with 21 spices
- 1 tablespoon or so of butter
- foil
- glass baking dish (if you don't have small glass baking dishes just layer everything directly on the piece of foil and seal the edges)
Directions:
Preheat the oven to 350 F. Chop up all your vegetables so they are ready to be layered, and season your chicken breast.
Add a few thin curls of butter to the bottom of your baking dish. Layer a little more than half of your onion ring slices on top of the butter. Place the seasoned chicken breast on top of the onion. Add the rest of the onion ring slices on top of the chicken breast. Add a few thin curls of butter on top of the onion ring slices. Add the carrots slices on top of the chicken and onions. Layer the potato rounds on top of the carrots, onions and chicken. Add the rest of your butter on top of everything. Sprinkle a little salt and pepper on top, and some extra seasoning if you wish. (Typing that out is much more complicated than actually putting the bundle together - just toss everything into a baking dish, bam done, this just happens to be exactly how I like to layer my bundles)
Grab out a nice sized piece of foil, set your full baking dish in the middle and wrap the foil tightly around the entire thing; making sure to roll and seal the edges. Place the foiled baking dish in the oven, on the rack is fine or if you are making several bundles it is easier to set them on a baking sheet and slide the whole thing into the oven. Bake for 1 hour and 30 minutes.
Remove from the oven and be careful when unrolling the foil because the steam is definitely hot. There will be a lot of juices and melted butter in the dish, which you will want to dump out to make eating easier if you plan on just eating it straight from the baking dish, or you can scoop and fork out all the veggies and chicken and put them on a new plate to serve.
