I had never heard of crinkle cookies, let alone made them before, but they looked fantastic in the pictures I kept seeing when I did a search for Christmas cookies and the name kept popping up in blogs and cooking forums. So, that convinced me to make them for my second cookie to send out in my goodies packages this year. I wasn't sure how well they would ship because they are a soft cookie, but they held up just fine in transit.
The cinnamon comes through really nicely giving it a warm homey taste. They are soft and chewy, and leave powdered sugar on your fingers. Compared to the effort of the pinwheel cookies, these were a breeze to make. Mix up the dough, refrigerate, and then bake. Bam, done, finished. And they were just so good. I was sad to see them go, I will have to make up some for myself very soon...oh and right out of the oven!?! Fantastic! You will definitely not regret making these.

- 8 oz semisweet chocolate chips
- 4 tablespoons butter
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 whole eggs
- 1 1/2 cup flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 cup powdered sugar
Directions:
Using a double boiler, melt the chocolate chips and butter together. Remove from the heat once melted.
Beat the eggs and sugar until fluffy. Then, beat in the vanilla extract. Stir in the melted chocolate mixture. Mix together the flour, salt, cinnamon, and baking powder in a bowl. Add the flour mixture to the chocolate mixture, stirring to combine. Cover and refrigerate 4 hours or overnight, so that the batter is firm enough to roll. If you leave the batter overnight, let stand at room temperature for 5-10 minutes so that the dough is malleable enough to work with.
Preheat the oven to 325 F. Line a baking sheet with parchment paper. Fill a shallow bowl with the powdered sugar. Form the dough into balls that about about 1.5" in diameter and roll them in the powdered sugar before placing them on the prepared baking sheet. Bake for 10-12 minutes until the edges are firm but the centers are soft. Cool on a wire rack (if any make it that long) and seriously enjoy!
