Pumpkin Cheesecake

I love this cheesecake! It is a softer cheesecake, but deliciously rich and pumpkin-y. Pumpkin pie had always been the norm for Thanksgiving. Last year I decided I wanted to try something new. I wasn't 100% sure of pumpkin cheesecake - to me it just sounded kind of odd. Cream cheese and pumpkin? I don't know. I eventually decided that if I didn't like it somebody would, it had someplace to go where people would eat it - one of the nice things about having family nearby, right? Turns out that wasn't an issue at all! Everybody thought it was scrumptious. I've made it 4 or 5 times since. So good, perfect for the holidays!

Mini Triple Chocolate Cheesecakes

Grade: A

Time it takes: 4 hours (25 minutes prep, 35 minutes baking, 3 hours to chill)

Yield: 24 mini cheesecakes

These ones went the fastest out of the mini cheesecakes! It was no wonder though, they looked scrumptious and they were decadently delicious. I tried to split a peanut butter cheesecake with Chris so he would split a triple chocolate cheesecake with me, but he said heck no to that...he wanted the triple chocolate all to himself. So, I was just absolutely forced to eat one of each! Having them in miniature form is a plus because they are rich, you wouldn't want to have a really big piece of this - cupcake is the perfect size.

I halved the recipe, but that required 1 and a half eggs - a tricky manoeuvre. So, I am going to post the full recipe that makes 24 cupcakes and let you decide for yourself if you would like to halve it. Chris cut the egg in half for me by breaking it onto a cutting board and then separating the yolk and white into two parts - nothing fancy, but it did the trick. Also, since these were obviously the favourite flavour having more wouldn't be such a bad thing.

Mini Peanut Butter Cheesecakes

What doesn't sound good about these cheesecakes? Cheesecakes plus peanut butter plus reese's peanut butter cups?! Yum!

I made these and a few other flavours of mini cheesecakes for my uncle's birthday party. I'm not sure which I liked better, the peanut butter cheesecakes or the triple chocolate cheesecakes. Make both and then you tell me!

Mini Oreo Cheesecakes

Grade: B

Time it takes: 3 hours and 30 minutes (10 minutes prep, 20 minutes baking, 3 hours to chill)

Yield: 12 mini cheesecakes

As I said in the previous post, my uncle was in town over his birthday. We had a dinner party to celebrate. His favourite birthday treat is cheesecake. So, I decided to do a bunch of mini cheesecakes in a variety of flavours. Along with oreo cheesecakes, I made triple chocolate cheesecakes and peanut butter cheesecakes - recipes to follow.

They were a hit! Super cute and tasty, and it was fun having a little bit of each flavour. I originally wanted to make six of each type, but it got complicated halving and third-ing the recipes. I also looked for super simple recipes because I was making so many different kinds. These mini oreo cheesecakes take no time at all.
